1. A microparticle, including a matrix consisting of casein and chitosan in a weight ratio of chitosan to casein of 1: 5 ÷ 150, and a probiotic bacterium. 2. The microparticle according to claim 1, which further comprises a crosslinking agent. A microparticle according to claim 2, wherein said crosslinking agent is a divalent metal cation selected from the group consisting of Ca, Mg, Zn, Fe, and combinations thereof, tripolyphosphate, vanillin, genipine, and combinations thereof. A microparticle according to claim 2, wherein said crosslinking agent is selected from the group consisting of Ca, sodium tripolyphosphate and vanillin. The microparticle according to claim 1, in which the weight ratio of chitosan to casein is 1: 5 ÷ 100, preferably about 1: 14 ÷ 40.6. A microparticle according to claim 1, wherein the probiotic bacterium is selected from the group comprising bacteria of the genus Bifidobacterium and bacteria of the genus Lactobacillus. A microparticle according to claim 1, wherein the probiotic bacterium is selected from the group consisting of bacteria Lactobacillus plantarum and bacteria Lactobacillus casei.
