The present invention relates to a novel method of capsulation wherein incense as a fat-soluble volatile material is O/W emulsified, thereby protecting the incense from external factors and stabilizing the incense, thus continuously maintaining the incense. The present invention provides a method for stabilizing incense, the method comprising the steps of: A) adding 4-8 wt% of an emulsifier to 30-50 wt% of glycerin and 10-25 wt% of purified water, followed by mixing； B) adding 20-30 wt% of a fat-soluble volatile material thereto, followed by emulsification； and C) adding 3-7 wt% of a cationic modifier thereto, followed by homogenization, thereby preparing an O/W type submicron emulsion.본 발명은 휘발성을 지니는 지용성 물질인 향을 O/W 에멀젼화하여 외부 인자로부터 향을 보호함과 동시에 안정화하여 그 향을 지속적으로 유지시켜 주는 새로운 방법의 캡슐화기술에 관한 것으로서, 본 발명에 따르면 A)글리세린 30~50 중량%와 정제수 10~25 중량%에 유화제 4~8 중량%를 가하여 혼합하는 단계； B)휘발성을 지닌 지용성 물질인 향 20~30 중량%를 가하여 유화하는 단계； 및 C)수용성 양이온 개질제 3~7 중량%를 가하고 균질화하여 O/W형 서브마이크론 에멀젼을 제조하는 단계를 포함하는 향의 안정화방법이 제공된다.
