FIELD: food industry.SUBSTANCE: scalder of sugar beet chips includes a vertical cylindrical housing with a conical bottom, divided into three sections. In each section there are horizontal sieves with openings for chip overloading. The scalder is also equipped with a loading device for beet chips, steam jackets with perforated inner walls for supplying heating steam and calcined solution, a rotor consisting of a vertical hollow shaft on which blades are mounted, spray nozzles and a system of vibrators for creating shaft oscillations. Steam pipelines of heating steam are led from the outside to the upper part of the scalder housing, pipelines for supplying the reagent solution with the nozzles fixed thereto and mounted on the outside of the scalder housing - to the lower part. A hollow pipe-shaft of the pipe-in-pipe type, with spray nozzles arranged along the helical line with the same pitch and fixed tangentially to the pipe-shaft axis, is mounted into the rotor. A rotary dosing device is used as a device for loading sugar beet chips. The stirring device is represented by an agitator and an arc-shaped knife for cleaning the surface of horizontal sieves in which there are radially located openings of rectangular shape with a larger useful area for pouring the chips from the section into the section.
