PROBLEM TO BE SOLVED: To provide a fish-paste product in an egg-like hollow spherical shape having an undercut part for use in cooking ranging from side dishes to rice, allowing a foodstuff such as cooked rice to be filled into the hollow part from an opening so as to form an edible product with a feeling of a fast food such as a rice ball.SOLUTION: A fish-paste product molding device 1 includes an undercut part for preventing a foodstuff filled in the cavity of a fish-paste product 13 in an egg-like hollow spherical shape from being easily pushed out. In order to achieve smooth sliding of the fish-paste product molding device 1 having the undercut part, flexible silicone rubber is used for a core mold 2 and a cavity mold 4 of the fish-paste product molding device 1. In the final stage of forming a fish-paste material 3, the fish-paste product molding device 1 including the fish-paste material 3 is immersed in warm water so that the fish-paste material 3 is heated to be hardened. The opening of the cavity mold 4 is provided with a thin membrane 10 in a fold form directed inwards, so that the foodstuff filled in the cavity is reliably retained.COPYRIGHT: (C)2014,JPO&INPIT【課題】おかずからごはんまでの料理に使用でき、開孔口から空洞部内に米飯等の食具材を詰め込んだものは、おにぎりなどのファストフード感覚で食することが出来る、アンダーカット部を有する鶏卵様形空洞球体の練り製品を提供する。【解決手段】鶏卵様形空洞球体の練り製品13の空洞部内に詰め込んだ食具材が容易にはみ出さないようにアンダーカット部を設け、アンダーカット部を有する当該練り製品成形器1をスムーズにスライドさせるために、練り製品成形器1のコア型2とキャビティー型4の材料には可撓性のあるシリコンゴムを使用する。練り製品素材3の成形最終段階の状態で当該練り製品成形器1ごと温湯入浸加温して練り製品素材3を固まらせる。また、キャビティー型4の開孔口には内側に向けて薄い襞状の膜10を設けて空洞部内に詰め込んだ食具材の保持を確実にする。【選択図】図1
