The present invention relates to a manufacturing method of macaron containing purple rice, more specifically the manufacturing method of the macaron containing the purple rice which comprises the following steps: mixing 50-100 parts by weight of almond powder and 50-200 parts by weight of powdered sugar with 100 parts by weight of purple rice powder, and adding 50-80 parts by weight of egg white into the mixture before kneading to obtain dough； adding 50-150 parts by weight of meringue into 100 parts by weight of the dough, and stirring the mixture for 1-10 minutes in a speed of 10-100 rpm to obtain a stirred mixture； inserting the stirred mixture into a pastry bag with a nozzle for molding and drying； and firstly baking the molded mixtures in the upper fire at 120-130 and the lower fire at 125-135 for 5-15 minutes, and relocating the molded mixture into the opposite direction before secondly baking for 5-15 minutes. [Reference numerals] (AA) Mixture including super purple rice powder；(BB) Stirring after adding meringue；(CC) Stirring；(DD) Molding and drying；(EE) Firstly cooking and secondly cooking；(FF) Macaron containing super purple rice본 발명은 슈퍼자미(purple rice)가 함유된 마카롱(Macaron)의 제조방법에 대한 것으로 보다 상세하게는 슈퍼자미 분말 100중량부에 대하여 아몬드 분말 50∼100중량부, 분당(powdered sugar, 分糖) 50∼200중량부의 혼합물에 계란 흰자 50∼80중량부를 넣고 반죽하여 반죽물을 얻는 단계； 상기의 반죽물 100중량부에 대하여 머랭(Meringue) 50∼150중량부를 넣고 10∼100rpm으로 1∼10분 동안 교반하여 교반물을 얻는 단계； 상기의 교반물을 짤주머니에 넣고 성형하고 건조하는 단계； 및 상기의 성형물을 윗불 120∼130℃ 및 아랫불 125∼135℃에서 5∼15분 동안 1차 굽기를 한 후 성형물의 위치를 반대로 하여 5∼15분 동안 2차 굽는 단계를 포함하는 것을 특징으로 하는 슈퍼자미가 함유된 마카롱의 제조방법 및 동 방법에 의해 제조한 슈퍼자미가 함유된 마카롱에 관한 것이다.
