PROBLEM TO BE SOLVED: To provide a method for producing container-contained carbonic acid-containing jelly in which a uniform jelly can be produced and easily filled into a container.SOLUTION: The method includes letting a carbonic acid gas be contained in an aqueous solution of sodium alginate or low-methoxyl pectin and sparingly soluble calcium, followed by adding gluconodeltalactone, filling into a container, and sealing thereof. The sparingly soluble calcium comprises one of calcium citrate, calcium secondary phosphate, calcium carbonate, and calcium sulfate, or a combination thereof. The aqueous solution contains sodium pyrophosphate. The temperature of the aqueous solution, when the gluconodeltalactone is added, is preferably 15°C or less. The pH of the aqueous solution, when the gluconodeltalactone is added, is preferably 3.8 or less.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】均一なゼリーを製造可能で、容器への充填が容易な容器入り炭酸ガス含有ゼリーの製造方法を提供する。【解決手段】アルギン酸ナトリウムまたは低メトキシルペクチンと難溶性カルシウムとの水溶液に炭酸ガスを含有させた後、グルコノデルタラクトンを加えて容器に充填し密封する。難溶性カルシウムはクエン酸カルシウム、第二リン酸カルシウム、炭酸カルシウムまたは硫酸カルシウムの1または2以上の組み合わせから成る。水溶液はピロリン酸ナトリウムを含む。グルコノデルタラクトンを加えるときの水溶液の温度は15℃以下であることが好ましい。グルコノデルタラクトンを加えたときの水溶液のpHを3.8以下にすることが好ましい。【選択図】図1
