PROBLEM TO BE SOLVED: To provide a green material precipitation inhibitor for peeled chestnuts in a sealed container, the peeled chestnuts in the sealed container and a green material precipitation control method for the peeled chestnuts in the sealed container, in which the peeled chestnuts are received and sealed in the container for heat sterilization to obtain the peeled chestnuts in the sealed container, and even if stored at least one year or more at an ordinary temperature (20-30°C) and further for a long term of more than three years, the precipitation of green materials generated in peeled chestnuts is suppressed and good flavor is maintained.SOLUTION: A precipitation inhibitor is provided for suppressing green materials exposed on the peeled chestnuts stored, the peeled chestnuts in the sealed container obtained by receiving and sealing the peeled chestnuts in the container and subjected to the heat sterilization. The green material precipitation inhibitor for the peeled chestnuts in the sealed container is characterized by containing an amino acid as an active ingredient.
