PROBLEM TO BE SOLVED: To provide the new flaked bonito product and its production method which is to obtain the flaked bonito product with reduced salt concentration from normal flaked bonito products (fish flaked product) processed in node such as bonito and mackerel.SOLUTION: This invention features that to obtain the flaked bonito product by after roasting treatment of dried bonito of fish meat processed in node, immerse it in hot water for a suitable time, and cut it to an appropriate thickness under lowered salt concentration of the dried bonito. Moreover, it is preferable that the dried bonito immersed in hot water is subjected to flaking work after stored in a refrigerated state for a suitable time.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】 カツオ節やサバ節等の節加工された通常の節製品(魚節)から、塩分濃度を低下させた削り節製品が得られるようにした新規な削り節製品並びにその製造方法を提供する。【解決手段】 本発明は、節加工された魚肉の魚節を焙乾処理した後、適宜の時間、熱水に浸漬し、魚節の塩分濃度を低下させた状態で、適宜の厚みに削り出して削り節製品を得るようにしたことを特徴とする。なお、熱水に浸漬した後の魚節は、適宜の時間、冷蔵保存した後、削り出しに供されることが好ましい。【選択図】図1
