PROBLEM TO BE SOLVED: To provide a method for easily screening a lactic acid bacteria strain having diacetyl productivity by PCR in a short time, and to provide a strain obtained by the same.SOLUTION: In a path generating diacetyl, a diacetyl production strain is easily and efficiently screened by PCR targeting an enzyme gene carrying the taking of citric acid into a bacterial cell. A selected lactic acid bacteria strain is obtained by this method, and the lactic acid bacteria strain is used to produce food and drink having an unprecedented strong flavor.COPYRIGHT: (C)2014,JPO&INPIT【課題】ジアセチル産生能を有する乳酸菌株をPCRによって簡便かつ短時間にスクリーニングする方法、およびそれにより得られる菌株を提供する。【解決手段】ジアセチルを生成する経路において、菌体内へのクエン酸の取り込みを担う酵素遺伝子を標的としたPCRによって、簡便にかつ効率良くジアセチル生産株をスクリーニングする。この方法により選抜された乳酸菌株を得て、該乳酸菌株を使用することにより、従来にない強い発酵風味を持つ飲食品を製造する。【選択図】なし
