PURPOSE: A beverage using leaves, stems, root bark, and fruits of mulberry is provided to secure the pharmacological activity of the mulberry, and to improve the palatability. CONSTITUTION: A beverage using mulberry is obtained by the following steps: extracting crushed mulberry leaves and stems using water at 60~65deg C for 7hours, and decompress-distilling to obtain a hot water extract of the mulberry leaves and stems; obtaining a hot water extract of crushed mulberry root bark using the same method; adding water to mulberry fruits, and compressing to obtain mulberry fruit juice; and mixing 10wt% of mulberry leaf and stem hot water extract, 12wt% of mulberry root bark hot water extract, 10wt% of mulberry fruit juice, 52.5wt% of purified water, 1.7wt% of sugar, 4.5wt% of high fructose corn syrup, 2.5wt% of honey, 0.15wt% of citric acid, 1.5wt% of sorbitol, and 0.15wt% of salt.본 발명은 뽕나무의 잎, 줄기, 뿌리 껍질 및 열매를 이용한 음료를 개시한다. 구체적으로 본 발명은 뽕잎 및 뽕나무 줄기의 혼합 분쇄물의 열수 추출액 15 내지 30 중량%, 뽕나무 뿌리 껍질 분쇄물의 열수 추출액 4.5 내지 12 중량%, 및 뽕나무 열매에 가수(加水)하여 얻은 압착액 2.5 내지 10 중량%로 포함함으로써 기호도가 높은 음료를 개시한다.
