In addition, since Cudrania tricuspidata is hot-water extracted with the addition of minerals, more useful components of Cudrania tricuspidata can be extracted and contained in the gangjeong； and since the gangjeong is covered with the bean powder after mixing the aronia fruit powder in the grain syrup, the bean powder is prevented from departing from the gangjeong due to the aronia fruit powder.본 발명은 찹쌀가루를 주재료로 하고 이를 꾸지뽕 열수추출액을 이용하여 반죽하며 아로니아 열매 분말을 포함하는 고물을 묻혀서 강정을 제조함으로써, 단맛 위주의 종래 강정에 비하여 맛과 영양이 개선된 기능성 찹쌀강정의 제조방법 및 이 방법으로 제조되는 찹쌀강정에 관한 것이다.본 발명에 따른 찹쌀강정은 강정 제조시 꾸지뽕 열수추출액을 이용하여 반죽하고 고물에 아로니아 열매 분말을 포함하므로 고농도의 당류로 인한 당뇨병이나 대사증후군 발병 위험을 낮출 수 있고 아로니아 열매의 떫은맛이 조청의 단맛을 상쇄하므로 강한 단맛을 싫어하는 취식자의 부담을 줄일 수 있으며, 또한 미네랄을 첨가하여 꾸지뽕을 열수추출함으로써 꾸지뽕의 유용성분을 좀 더 많이 추출하여 강정에 함유시킬 수 있고 아로니아 열매 분말을 조청에 혼합한 후 고물을 묻히므로 아로니아 열매 분말로 인하여 고물이 강정으로부터 이탈되는 것을 방지할 수 있다.
