The invention relates to a storage stable composition and method of manufacture containinga biological material, oil and a biopolymer which has a water activity of lessthan 0.5. The biological material in the composition attains significant stabilityand resistance to temperature, humidity and oxygen degradation. Advantagesfrom the invention include the ability to stabilise, further process, storeand then release the probiotic bacteria at a later date and retain viability. Inaddition the composition and method is more practical for producing and marketing ofbiological materials including probiotic material as it is simple, has low energyrequirements and the resulting product is easy to incorporate in formulations andfoods.
