The present invention is directed to rhodoxanthin formulations, whereby the rhodoxanthin is embedded in a matrix of a protective hydrocolloid, the protective hydrocolloid being preferably a modified food starch. The present invention is further directed to the manufacture of such formulations as well as to their use for colouring beverages, food or pharmaceutical compositions, whereby the rhodoxanthin formulations impart an intense red colour to those coloured beverages, food or pharmaceutical compositions. The beverages, food or pharmaceutical compositions which comprise the rhodoxanthin formulations are further aspects of this invention.La présente invention concerne des formulations de rhodoxanthine, la rhodoxanthine étant incorporée dans une matrice dun hydrocolloïde protecteur, lhydrocolloïde protecteur étant de préférence un amidon à usage alimentaire modifié. La présente invention concerne en outre la fabrication desdites formulations ainsi que leur utilisation dans la coloration de boissons, daliments ou de compositions pharmaceutiques, les formulations de rhodoxanthine transmettant une intense couleur rouge à ces boissons, aliments ou compositions pharmaceutiques colorés. Les boissons, aliments ou compositions pharmaceutiques qui comprennent les formulations de rhodoxanthine constituent dautres aspects de la présente invention.
