The present invention relates to a rice cooking composition for nutrient enhancement and flavor improvement, and to a method for preparing the rice cooking composition. More specifically, a method for preparing a rice cooking composition for nutrient enhancement and flavor improvement comprises: a step of adding water to vitamin B1, selecting one or more ingredients from mixed preparation ingredients consisting of vitamin B2, vitamin B5, vitamin B6, folic acid, and vitamin B12, and coating the vitamin B1 with the selected one or more ingredients a step of adding minerals and amino acid in the mixed preparation ingredients to enhance nutrients of the rice cooking composition and improve flavor of the rice cooking composition and a step of drying the mixed preparation ingredients at a low temperature under a reduced pressure condition to prepare a mixed preparation composition. The mixed preparation composition comprises one or more selected from 13 to 33% of vitamin B2, 27 to 40% of vitamin B6, 1 to 10% of folic acid, and 27 to 40% of vitamin B12 after dispersing 10 to 30% of vitamin B1 into 4 to 6% of water. The present invention is capable of preventing the loss of vitamin B1 during distribution or rice cooking processes by coating rice with vitamin B1 to supplement vitamin B1 that is deficient in rice.
