PROBLEM TO BE SOLVED: To provide, in a composite food product of water-containing materials, a pie in which the crispy eat texture is maintained by a simple method, and to provide a pie composite food product in which said pie is used.SOLUTION: A high oil content pie dough is prepared by blending an oil content into a dough as an oil-in-water type emulsion oil-and-fat composition. Because of this, oil off does not occur and the dough preparation is possible. And, the pie prepared by baking said dough is, in a composite food product of water-containing materials, excellent in the ability of maintaining the crispy eat texture.SELECTED DRAWING: None
