PROBLEM TO BE SOLVED: To provide a syneresis reducing agent for jam, having syneresis reduction effect while excellently retaining the flavor and texture of a food.SOLUTION: A syneresis reducing agent for jam includes water-soluble polysaccharide containing galacturonic acid derived from beans, and has a viscosity of 10 wt.% of the aqueous solution of the water-soluble polysaccharide of 150 mPa s or lower at 20°C. The syneresis reducing agent for jam has a methyl esterification degree of the water-soluble polysaccharide containing galacturonic acid derived from beans of 50% or less. In the syneresis reducing agent for jam, syneresis reduction effect is decreased by 15% or more to a syneresis amount when not adding the syneresis reducing agent.
