The present invention relates to processes for obtaining liquid concentrates from plant species intended for infusion or decoction, and from wine and products obtained therefrom, pertaining to the beverage and foodstuffs area. liquid concentrate, obtained cold, soluble in any hot or cold aqueous mixture, stable at room temperature and available in a single, portable dose for easy and instant preparation of non-alcoholic teas and wines, as well as for the preparation of other soft drinks, drinks, cocktails, hot or cold, among other food uses. The process from plant species comprises the following steps: 1 - screening of raw materials; 2 - washing and disinfection of used parts of fresh plants; 3 - fragmentation or grinding of plant material; 4 - extraction of selected plants or parts; 5 - separation of the extracted liquid from the residual solid material; 6 - concentration of the extracted liquids; 7 - stabilization and aromatization of concentrated liquids.
