The present invention is a process for fortification of pulses with essential micronutrients like Iron, calcium, magnesium, phosphorus and zinc. The pulses are enriched with high pressure impregnation technology. The enriched nutrients in pulses will not be washed away when it is washed with water prior to cooking. In the process for fortification of pulses with essential micronutrients, first aqueous solution of mineral fortified water is prepared by mixing (Fig 1) the mineral enriching agents with predetermined quantity of water at high pressure for a reasonable period of time. This mineral fortified aqueous solution is mixed with the pulses (Fig 2) using high pressure impregnation technology for a predetermined period of time. The pressure maintained in the mixing chamber (fig 2) and duration of mixing is based upon the moisture content and size of the pulses. This invention improves the mineral content of the pulses. These fortified Pulses are subjected to washing and oiling/polishing at high pressure to retain the desirable and also permitted level of the micronutrients in the pulse.
