According to an embodiment of the present invention, a fresh chili pepper stalk removing unit includes: a pair of compression rolls which weakens a bonding force between the bodies and stalks of fresh chili peppers by making fresh chili peppers charged horizontally pass through a compression process； plural pairs of transfer rolls which are installed with the engagement of gear ratios, in which a rotational speed gets increased towards a transfer direction to separate the bodies and stalks of fresh chili peppers, are arranged at predetermined intervals, and have gaps so that fresh chili peppers are able to pass； a roll compression force controlling unit which controls the compression force of the transfer rolls； a transfer roll driving motor which rotates the transfer rolls； and a transfer roll power transmitting means which transmits the rotatory power of the transfer roll driving motor to a driving roll playing a role of a driving shaft among the transfer rolls. Paired rotation centers of the transfer rolls are mutually aligned in a vertical direction, a transfer direction, in which fresh chili peppers are transferred, is perpendicular to an extension line of rotation centers of the paired transfer rolls, and the transfer roll power transmitting means transmits power between the transfer roll driving motor and transfer rolls aligned in the most upstream among the plurality of the transfer rolls.
