1. A method for producing a soy protein product having a soy protein content of at least about 60 wt% (N × 6,25) on a dry weight basis, characterized by:. (A) extracting the soy protein source with an aqueous solution of calcium salts, usually sodium calcium chloride, at low pH, generally from 1.5 to 5.0, optionally containing an antioxidant to cause solubilization of the soy protein from the protein source and to form an aqueous solution of soy protein, (b) at least partially separating the aqueous soybean protein solution from the source ost atochnogo soy protein, (c) optionally diluting the aqueous soybean protein solution, and (A) (d) optionally adjusting the pH of the aqueous protein solution to a value within the range from 1.5 to 5.0 and which differs from the pH of the extraction, (e) optionally additional purification soy protein aqueous solution to remove residual solids, (f) a concentrated aqueous solution of soy protein while maintaining the ionic strength substantially constant by using a selective membrane technique, (g) optionally concentrated by diafiltration stretching ora soy protein, (h) optionally adjusting the pH of the concentrated and optionally diafiltered soy protein solution to a value within the range of 1,5 to 7,0, (i) diluting the concentrated and optionally diafiltered and subjected to regulate pH soy protein solution in water, (j) separating the precipitate formed from the dilution water, called the supernatant, and (ki) drying the precipitate of the separated soybean protein, or (kii) washing the separated soybean protein with water in an amount of from 1 to 10 volumes of extraction and Elevation1.
