PROBLEM TO BE SOLVED: To provide a discoloration-preventing agent excellent in effect of preventing anthocyanin pigment discoloration by light and heat.SOLUTION: This anthocyanin pigment discoloration-preventing agent is a tocopherol-containing emulsified composition of oil-in-water and/or -polyvalent-alcohol type. As the tocopherol, for instance, extracted tocopherol having a total content of d-&alpha-tocopherol and d-&gamma-tocopherol in total tocopherol of &ge50% is used.
