One or more parallel processing tracks, each of which has a section for notching the onions selected according to size and possibly to shape, a section in which the onions are topped and tailed and a section in which the skin and the outer coat is stripped off, are provided in a peeling plant. A transport mechanism guide the onions one by one to the first section in which one or more conveyor belts carry the onions. Above the conveyor there is at least one grooving knife with its blade projecting into or near enough into the path followed by the onions on the belts. The stroke of the knife is adjusted so that it cuts only through the outer skin and the first coating of the onions. The second section also has two conveyor belts the spacing and speeds of which can similarly be adjusted. A mechanism is provided for pressing the onions down on to the belts, and a line of rotary cutters extending in the direction of motion beneath the belt, shears off the tops and tails as they project between the belts.
