The present invention aims to provide extracts available for use in acidic beverage production and containing 2,5-piperazinedione,3,6-bis(phenylmethyl)-,(3S,6S)-, which is a useful substance with an improving effect on learning motivation. When an acid treatment step is included in the production of extracts containing 2,5-piperazinedione,3,6-bis(phenylmethyl)-,(3S,6S)-, it is possible to obtain acidic extracts which cause no sedimentation even when added to beverages. The extracts of the present invention can be added to beverages and so on without impairing the taste inherent to foods and beverages, and can be used for production of acidic beverages preferred by most consumers.본 발명의 목적은 학습의욕 개선 작용을 가지는 유용 물질인 2,5-피페라진디온,3,6-비스(페닐메틸)-,(3S,6S)- 를 함유하는 산성 음료의 제조에 사용가능한 엑기스를 제공하는 것이다. 2,5-피페라진디온,3,6-비스(페닐메틸)-,(3S,6S)- 를 함유하는 엑기스의 제조에 산 처리 공정이 포함되는 경우, 음료에 첨가해도 침전을 만들어 내지 않는 산성 엑기스를 얻는 것이 가능하다. 본 발명의 엑기스는 음식품 본래의 향미를 손상시키는 일 없이 음료 등에 첨가할 수 있고, 시장에서 선호되는 산성 음료의 제조에 이용할 수 있다.
