In the proposed method of mashing, the first portion of the mash, in particular the portion of the rye mash, is rubbed and heated to a temperature below the boiling point (≤90 °), the second portion of the mash is overwritten, and the mixture of the first and second parts of the mash is heated in stages.Настоящее изобретение относится к способу затирания для производства квасного сусла и способу производства концентрата квасного сусла и кваса. В предлагаемом способе затирания первую порцию затора, в частности порцию ржаного затора, затирают и нагревают до температуры ниже температуры кипения (≤90°), вторую порцию затора затирают и смесь первой и второй частей затора нагревают поэтапно.
