PROBLEM TO BE SOLVED: To provide a refrigerating/freezing apparatus stably maintaining cooling conditions and supercooling conditions while being prevented from increase in temperature difference between the surface and the inside of a food material to be refrigerated/frozen.SOLUTION: The refrigerating/freezing apparatus includes: a freezing box 15 housed inside a chamber (A) having a cool-air blowout port 12 via an insulating material 14 and on the peripheral wall surface of which punching metal having many openings is set and a high-voltage power supply applying a negative voltage to the freezing box 15. The refrigerating/freezing apparatus homogeneously cools the food material by putting the food material wrapped with wrap film on a shelf board 16 of the freezing box 15 and setting a temperature in the chamber (A) to 0 to -20°C, so as to cool the inside of the chamber (A) while applying a negative high voltage such as DC voltage of -3,500 V to the freezing box 15.COPYRIGHT: (C)2012,JPO&INPIT【課題】冷蔵、冷凍される食材の表面と内部との温度差が大きくならない状態で冷却状態、過冷却状態を安定して保持できる冷蔵・冷凍装置を提供する。【解決手段】冷気吹き出し口12を備えた庫内Aに、絶縁材14を介して収納され、多数の開口が設けられたパンチングメタルを周壁面に備えた冷凍ボックス15と、冷凍ボックス15に負の電圧を印加する高電圧電源とを備えた冷蔵・冷凍装置。冷凍ボックス15の棚板16に、ラップフィルムを巻いた食材を置き、庫内Aの温度を0°~-20℃に設定し、冷凍ボックス15に負の高電圧、例えば-3500Vの直流電圧を印加した状態で庫内Aを冷却することにより、食材を一様に冷却することができる。【選択図】 図2
