PURPOSE: A napa cabbage salting tank is provided to salt napa cabbages with proper and uniform salinity in a tank capable of maintaining inside temperature, thereby reducing the time required in salting in the winter season. CONSTITUTION: A napa cabbage salting tank(20) is divided into a upper space where napa cabbages are loaded and salty water is filled and a lower water jacket(24) where heated water circulates and includes a compressed air injection pipe(25) installed in the upper space. The heated water supply tank supplies heated water to the water jacket of the salting tank. A compressor supplies compressed air to the compressed air injection pipe. A controller controls the heated water supplied from the heated water supply tank to the water jacket and the amount of compressed air supplied from the compressed air injection pipe. The compressed air injection pipe is connected to an air header(10) through a pipe. An inlet(26) and an outlet(27) installed in the water jacket are connected to the heated water supply tank through a pipe for heated water to be recollected into the heated water supply tank after circulating inside of the water jacket. A solenoid valve is installed at the heated water supply pipe, of which the opening and closing is controlled by the controller. The air compressor and the compressed air injection pipe are connected with each other through a pipe, and a solenoid valve controlled to be open or closed by the controller is installed at the pipe.본 발명은 김치의 주원료인 배추를 절이기 위한 배추 절임 시스템에 관한 것으로, 더욱 상세하게는 다량의 배추를 절이는 김치공장과 같은 장소에서 배추를 비교적 빠른 시간에 염도의 편차 없이 균등하게 절일 수 있도록 한 배추 절임 시스템에 관한 것이다.본 발명은 배추가 적재되고 염수가 충만되는 상부 공간과 온수가 순환되는 하부 워터 자켓으로 구획되고 상부 공간에 압축공기 분사관이 설치되어 있는 배추 절임 탱크와, 상기 배추 절임 탱크의 워터 자켓에 온수를 공급하기 위한 온수 공급탱크와, 상기 배추 절임 탱크의 압축공기 분사관으로 압축공기를 공급하기 위한 에어 콤프레서와, 상기 온수 공급탱크로 부터 워터 자켓으로 공급되는 온수 및 에어 콤프레서로 부터 압축공기 분사관으로 공급되는 압축공기의 양을 제어하기 위한 콘트롤러를 구비하여 배추 절임 탱크의 내부를 항온으로 유지시킴과 동시에 상부 공간에 충만된 염수를 난류화시켜 배추를 절일 수 있게 한 것을 특징으로 하는 배추 절임 시스템이다
