PROBLEM TO BE SOLVED: To provide a new method for cultivating leaf and stem root vegetables and fruit vegetables, which is applied with exceeding the conventional application stage of cultivation by exposure to coldness while making the best use of merits of cultivation by exposure to coldness and is not affected by climatic variation and controls undesirable influences on qualities of edible parts by low-temperature treatment as much as possible.SOLUTION: The method for cultivating leaf and stem root vegetables and fruit vegetables having a high sucrose concentration comprises controlling the root parts of leaf and stem root vegetables or fruit vegetables under specifically low-temperature conditions in a fixed cultivation period before harvesting or in a fixed retention period during harvesting so as to raise a sucrose concentration contained in edible parts of leaf and stem root vegetables or fruit vegetables.
