PROBLEM TO BE SOLVED: To provide a method of manufacturing a soft-shell turtle stock solution whereby a soft-shell turtle stock solution can be produced while reducing the odor of lye.SOLUTION: The method of manufacturing a soft-shell turtle stock solution executes a first process ST01 to a sixth process ST06. Soft-shell turtle raw meat SR is floated in water W and heated to extract lye from the soft-shell turtle raw meat SR into the water W to create soft-shell turtle lye-free meat SB. The lye-free meat SB is floated in sake R and heated to extract the soft-shell turtle component S of the lye-free meat SB into the sake R to produce an extract SP of soft-shell turtle components.
