Disclosed is an apparatus for peeling a ginkgo using liquefied nitrogen, which comprises: a tank for containing liquefied nitrogen； a cooling transfer unit including a transfer pipe which is horizontally installed by penetrating the tank to form a cooling space therein by acting the liquefied nitrogen accommodated in the tank to an outer side surface thereof, and a transfer screw which is installed inside the transfer pipe to transfer a ginkgo supplied from a hopper through the cooling space； and a hitting peeling unit including a hitting member for repetitively performing a seesaw motion by being installed in a frame of an outlet side of the transfer pipe to hit the ginkgo discharged by passing through the transfer pipe by the transfer screw, by a hitting end, and a hitting operation unit for allowing the hitting member to repetitively perform a seesaw motion. Accordingly, the ginkgo supplied from the hopper is indirectly, rapidly frozen by the liquefied nitrogen while passing through the cooling space of the transfer pipe by the transfer screw, and the ginkgo discharged by being rapidly frozen by passing through the cooling space is hit by the hitting member to peel a middle pericarp thereof.
