PURPOSE: A producing method of red ginseng with controlled generation rate of main root cracks is provided to conveniently produce the red ginseng with the high yield. CONSTITUTION: A producing method of red ginseng with controlled generation rate of main root cracks comprises the following steps: firstly steaming fresh ginseng at 85-95 deg. C for 30 minutes-2 hours, and drying the steamed ginseng at 80-100 deg. C for 30 minutes-3 hours； and secondly steaming the dried ginseng at 90-100 deg. C for 30 minutes-4 hours while spraying water or effluent.본 발명은 (a) 수삼을 제1차 증삼하는 단계； (b) 상기 제1차 증삼된 수삼을 건조하는 단계； 및 (c) 상기 건조된 수삼을 제2차 증삼하는 단계를 포함하는 동체 균열이 억제된 홍삼 제조방법을 제공한다. 본 발명은 동체 균열이 크게 억제된 고급 홍삼의 신규한 제조방법을 제공한다. 본 발명에 따르면, 홍삼의 동체 균열의 억제뿐만 아니라, 백피 현상도 억제되고 및 색상도 종래의 홍삼과 거의 동일한 색상을 갖는 고급 홍삼을 제공할 수 있다. 본 발명의 추가적인 화학 약품 처리 없이 간단한 시설을 통하여 실시할 수 있는 이점이 있다.
