An in-line direct cryogenic method and system for cooling heated fluid food products such as sauces is disclosed. The method includes injecting the cryogen directly into the cooling fluid while adjusting the flow rate of the cooling fluid in response to the downstream temperature measurement and maintaining the rate of cryogen injection into the fluid. . According to this method, the flow rate of the source during the flow of the cryogen is adjusted to achieve process stability, product uniformity, and efficient use of the cryogen.
