The present invention relates to an apparatus intended to cut the stigmata and pistil of flowers of crocus, these flowers comprising, besides the pistil and stigmata, a cap in which are located the said pistils and stigmata, the apparatus is characterized in that it comprises: a chassis (1,21), an assembly comprising two plates (2, 3) of cutting of a cap of the flush mounted in parallel on the chassis (1,21) and separated from one another by a slot (4), the blades (13) of cutting the pistils and stigmata fixed to the chassis (1, 21), means (9 a, 29) of the individual input of a flower mounted on means of transport of said gripping means of the flower, said transport means being mechanically linked to the chassis (1, 21) and movable with respect to the chassis and being able to transport the input of the point of entry into the slot (4), arranged between the blades mounted in parallel between them, and then towards the blades (13) of cutting the pistils and stigmata.
