PURPOSE: A manufacturing method of grape juice is provided to return grape seed extract directly to grape juice manufacturing process using hot grape juice instead of ethanol as extraction solvent.CONSTITUTION: A grape juice is heat treated and extraction filtered during the process of grape juice attainment, and the grape seed is collected by centrifuging of rotating mixer tank of heat treatment step and heated for 10 minutes at 95-98deg C to extract grape polyphenol and effective component and used for grape juice filtering process. The heating temperature of the grape seed is done at 80-100deg C for 10-60 minutes to extract the grape seed and added to the grape juice filtering process.COPYRIGHT KIPO 2013(가) 기술분야포도에 포도씨를 분리하여 포도씨 추출물을 제조하고, 이를 포도즙 제조과정에 다시 되돌려 포도즙 제조(나) 해결하고자 하는 과제추출용매로 뜨거운 포도즙을 이용하여 포도폴리페놀을 추출하여 용매구입 비용발생, 화재위험, 별도의 감압농축 공정 없이 포도씨 추출액을 그대로 포도즙 제조공정으로 되돌려 포도즙을 제조(다) 과제의 해결수단상기 목적을 달성하기 위하여 포도-파쇄-열처리-착즙-여과-충진으로 구성되는 일반적인 포도즙 제조과정 중에 탱크에서 열처리 도중 200rpm 이상을 교반 날개를 회전시켜 포도씨 만을 원심 수거한 다음 95-98℃에서 10분간 열처리 하여 포도씨로부터 포도폴리페놀 및 유용성분을 추출해내고 이를 여과하여 포도여과 공정으로 다시 되돌려 보내는 방법으로 포도즙을 제조(라)효과경제적이며 안전하게 포도씨로부터 포도폴리페놀 등을 추출하여 첨가물질이 없고 포도폴리페놀이 과량 함유된 건강기능성 포도즙을 제조할 수 있다.
