The present invention is a coffee roaster having new structure capable of being conveniently used. The composition of the present invention comprises a heating chamber including an electronic heater having the internal space of a chamber receiving inputted coffee beans and heating the inputted coffee beans, a stirring blade rotated by driving a motor to stir the coffee beans to heat, an outlet where the roasted coffee beans are discharged, and an opening-closing member electrically opening and closing the outlet； a discharging passage connected to the lower part of the heating chamber and having opened bottom； and a cooling separation unit including a mesh cup having the open top surface, including multiple separation outlets to receive the roasted coffee beans discharged to the discharging passage, to cut peels of the coffee beans while cooing the coffee beans at a room temperature, and to send the cut peels to the outside, and being rotated by driving the motor, a stirring cup having the rotating blade evenly mixing the coffee beans received in the mesh cup, and a collection supporting cup arranged on the lower side of the stirring cup and collecting the cut peels of the coffee beans being separated and discharged from the rotating mesh cup. The present invention having the composition has an effect of accurately controlling a temperature heating the coffee bean and time for heating the coffee beans by roasting and discharging the coffee beans without influences of outdoor air and latent heat heating the chamber when roasting the coffee beans.
