PROBLEM TO BE SOLVED: To provide a foaming property improver for albumen which enhances foaming properties of albumen, and provide an albumen composition having foaming properties even after being subjected to foaming property-reducing treatment, in particular, such as heat sterilization, freezing or drying.
SOLUTION: The foaming property improver for albumen includes water-soluble polysaccharide which is produced by subjecting soybeans or a soybean processed product to heating extraction at an acidic pH 2.4-4.0 at a temperature of >100 °C and which is added to albumen so as to increase the specific volume of the albumen after foamed to improve foaming properties of the albumen. The improver improves the foaming properties of the albumen to a higher extent of improvement when added to the foaming property-reduced albumen such as sterilized frozen albumen, dried albumen or egg yolk-mixed albumen than when added to normal raw albumen liquid.
