1. A method of producing a nutrient composition for infants, comprising the steps of: a) providing a mixture comprising vegetable fat, protein and carbohydrate, b) mixing said mixture in a high shear rotor-stator mixer, and subjecting said subsequent homogenization of the mixture at a pressure of 0-60 bar to give Body composition monomodal distribution of particle size, wherein 5% or less fat particles have a size less than 0.8 microns and at least 95% of fat particles have a size of 0.8-5 .mu.m and 5% or less fat particles have a size greater than 5 km.2. A method according to claim 1, wherein the mixture is homogenized at a pressure of 0-60 bar and then dried to provide a powder composition having a monomodal distribution after resuspension fat particle size, wherein 5% or less fat particles have a size less than 0.8 micron at least 95% of fat particles have a size of 0.8-5 .mu.m and 5% or less fat particles have a size greater than 5 mkm.3. A method according to claim 1 or 2, wherein the mixture is homogenized at a pressure of 0-60 bar in order to provide a composition with a monomodal distribution of the particle size of fat characterized by the presence of X modal diameter in the range 0,8-12 m, preferably in the range 0 8-11 microns, 0.8-10 microns 0,8-9 microns 0,8-8 microns 0,8-7 microns, 0,8-6 mm, 0.8-5 mm, 0, 8-4 microns 1-4 microns 1-3 microns 2-4 microns, and most preferably in the range 2-3 mkm.4. A method according to claim 1 or 2, wherein the mixture is homogenized at a pressure of 0-60 bar and then dried to provide a powder composition which, after resuspension in a liquid has a monomodal distribution of fat particles in size, wherein X represents the mode diameter in the range 0 8-12 microns1.
