PROBLEM TO BE SOLVED: To provide a plum processed product becoming a gelatinous state without using a gelatinizer while using unripe plums or frozen unripe plums, and having heat-resistance (shape retention in heating.)SOLUTION: The plum processed product having unripe plums or frozen unripe plums, and saccharide as the main ingredients, and containing no gelatinizer is such that a height of a cylindrical article is kept by 50% or more when heating a following cylindrical article at 200°C for 10 minutes. The cylindrical article: a cylindrical article which is produced by filling a cylindrical vessel of an inner diameter of 3 cm and a height of 1.5 cm with the plum processed product followed by removing the cylindrical vessel.
