PROBLEM TO BE SOLVED: To cut soybean curd in such a manner that syneresis and deformation of soybean curd occur rarely, to pack and to transport to a frying process efficiently and variously, for achieving high cutting processing performance.SOLUTION: The cutting method comprises: at least one crossing cutting step of arranging at least one crossing cutting edge for cutting a sheet-shaped soybean curd dough T which is formed continuously into plural rows of narrow-strip state soybean curd doughs having row width of at least one row of size to be packed in a row direction and a vertical cutting step in which at least two rows of the narrow-strip state soybean curd doughs cut in the crossing cutting step are cut into one soybean curd dough in a line direction.
