PROBLEM TO BE SOLVED: To provide a polyphenol derivative exhibiting a gene repairing action. A polyphenol derivative is an amphipathic compound composed of polyphenol, a carboxylic acid form of pyridine, and glycerin. This production method comprises a step of fermenting cowberry and soybean by adding Staphylococcus epidermis, which is a bacterium that is indigenous to human skin, and fermenting them to obtain a fermented solution, which is further purified with Diaion HP-20. The obtained polyphenol derivative exhibits excellent gene repair enzyme inducing action and gene repair, and is suitable for improving cell function. Furthermore, this derivative has applications as water- and oil-soluble cosmetics, foods and plant activators.
