The present invention relates to a dried pollack soup and a manufacturing method thereof. The dried pollack soup is made by manufacturing balls with potato powder and dried pollack powder and putting the potato dough balls into cooking broth containing the dried pollack powder such that texture of the potato dough balls is not gone too soft even though being stored for a long time. The potato dough balls contained in the dried pollack soup according to the present invention have excellent chewy texture during intake because of rigidity and elasticity compared with balls made with general glutinous rice, is not easily gone too soft in the soup because the dried pollack powder is mixed in dough for potato dough ball and starch particles of the potato powder are joined in an amylose chain with porous tissues of the dried pollack powder, and enable a user to enjoy original flavor of the potato dough balls even though the potato dough balls are stored for a long time in a state of being put in the soup by joining the potato powder with the dried pollack powder as an albumin ingredient of egg whites is coagulated by heat, and forming film on the surfaces of the potato dough balls as casein protein of milk is coagulated on the surfaces to further maintain shapes of the potato dough balls in the soup.본 발명은 감자분말과 황태분말로 옹심이를 제조한 후 황태분말이 함유된 요리수에 넣어 제조되고 장기간 저장하여도 옹심이의 식감이 저하되지 않는 황태 수프 및 이의 제조방법에 관한 것이다.본 발명의 황태 수프에 함유되는 감자옹심이는 통상의 찹쌀분말로 제조되는 옹심이에 비하여 견고성과 탄력성이 높아서 섭취시 쫄깃쫄깃한 식감이 우수하고, 감자옹심이 반죽에 황태분말이 혼합되어 있어서 감자분말의 녹말 입자가 황태분말의 다공질 조직과 아밀로오스 사슬로 결합되어 감자옹심이가 국물 속에서 쉽게 풀어지지 않으며, 또한 달걀흰자의 알부민 성분이 가열에 의해 응고되면서 감자분말과 황태분말을 결속시키고 우유의 카제인 단백질이 감자옹심이 표면에서 응고되면서 피막을 형성하여 국물 중의 감자옹심이 형태를 좀 더 유지시키므로, 감자옹심이를 국물 속에 넣은 상태로 오래 보관하여도 감자옹심이 본래의 풍미를 즐길 수 있다.
