The present invention relates generally to the field of coloured compositions. One aspect of the invention is a red composition comprising quince juice wherein the quince juice imparts the red colour to the composition and wherein no sugar or acid is added. The invention provides for the use of a red composition comprising quince juice to colour a food product, a nutritional formulation, a food supplement, a beverage, an ink or a pharmaceutical product. A further aspect of the invention is a method of preparing a red composition comprising quince juice.Cette invention concerne d'une manière générale le domaine des compositions colorées. Dans un aspect, l'invention concerne une composition rouge comprenant du jus de coing, ledit jus de coing conférant à la composition sa couleur rouge, aucun sucre ni acide n'étant par ailleurs ajouté.
