PURPOSE: A fermented black allium monanthum pill, and a producing method thereof are provided to reduce the strong taste of allium monanthum bulbs by fermenting and aging. CONSTITUTION: A producing method of a fermented black allium monanthum pill comprises the following: removing stems from the allium monanthum with bulbs, and washing the obtained bulbs； naturally during the bulbs in the shade for 2-3 hours； aging the dried bulbs at 65-75 deg C in a fermenter for 16-20 days； stirring the bulb inside the fermenter once every 5-8 days； and drying the aged allium monanthum bulbs in the shade for 4-5 days.본 발명은 발효 흑달래환 및 그 제조방법에 관한 것으로서, 보다 구체적으로는 달래의 알뿌리를 발효시킴으로써 기호성을 살리면서 기능성을 상승시켜 섭취가 용이한 발효 흑달래환 및 그 제조방법에 관한 것이다. 본 발명에 따르면 달래의 알뿌리를 숙성·발효 및 건조시킴으로써 간편하게 이용할 수 있고, 저장성이 우수하여 보관이 용이한 흑달래를 제조할 수 있다. 또한 본 발명의 흑달래는 숙성과정을 통하여 자극성이 강한 맛이 제거되어 섭취가 용이하고 기호도가 상승되는 장점이 있다.
