Compositions comprising cellulosic polymers and natural honey that displayreduced instability due to the presenceof a chelant that inhibits the activity of naturally occurring cellulases aredescribed. Methods of treating natural honey to inhibitcellulase activity comprising mixing the natural honey with a chelant andoptionally heating the mixture are provided.
