Process and related system for recovering fibres and value-added substances in industrially processed food farming products subjected to refining by extraction centrifugal machines. The refining process involves separating insoluble fibrous elements of coarse size (skins, fibres, pulp, etc.), and subsequent extraction of a liquid portion (juices, purée. etc.). Extraction normally takes place within a refining chamber or station, by forcing the food product through a sieve with holes of different size and number. The purpose of the invention is recovering the separated fibrous portion and subsequently reintegrating it in the liquid portion to ensure quality of the final product. To achieve this result, a high-pressure homogenization step of the separated fibrous portion is provided, possibly adding a quota of liquid. The process is also applicable when a squeezing operation of the fibrous part is provided, separated from the refining step said squeezing step is generally applied on fibrous elements exiting from a first refining stage (skins)
