PROBLEM TO BE SOLVED: To provide a method for producing a pancreatic tumor development-inhibiting composition with high physiological activity, and high pancreatic tumor development-inhibiting effect when ingesting as a food.SOLUTION: The invention relates to a method for producing a pancreatic tumor development-inhibiting composition comprising: polishing unpolished rice in a rice-polishing machine until 96% or more of a rice polishing rate and hydrating this polished rice; making a hydrated mixture of rice bran and a calcium compound in a mixer separately; mixing and steaming the hydrated polished rice and the hydrated mixture, and inoculating seed aspergillus into a culture bed so as to germinate; stirring a substrate to radiate heat generated with fermentation, and maintaining in a suitable temperature; drying a matured koji until 4% or less of water content in a temperature of goods of the substrate; and powdering in a condition where enzyme activity is maintained.SELECTED DRAWING: None
