The present invention relates to a method for manufacturing functional rice. The method for manufacturing functional rice comprising: a high pressure washing step for washing rice by spraying water on the rice at high pressure； a cold air drying step for drying the rice washed at the high pressure washing step with cold air； a vacuum drying step for putting the rice in a vacuum chamber and then decompressing the interior of the vacuum chamber at constant pressure in order to improve the porosity of the rice by forcibly desorbing free water contained in the rice dried with cold air； a spraying step for spraying an impregnation solution on the surface of the rice decompressed at the vacuum drying step； a pressurizing step for pressurizing the rice in order to let the impregnation solution permeate the pores of the rice by injecting high pressure nitrogen gas； and a drying step for drying the rice pressurized at the pressurizing step at room temperature. According to the method of the present invention, a technique, which increases the impregnation rate so as to let functional ingredients permeate into the rice and prevents a crack can be occurred on the surface of the rice through the process so as to improve the quality of the rice, is provided.본 발명은 기능성 쌀 제조 방법에 관한 것으로, 기능성 쌀 제조 방법은 공급된 쌀에 물을 고압 분사하여 세척하는 고압 세척 단계； 상기 고압 세척 단계에서 세척된 쌀을 상온에서 냉풍으로 건조시키는 냉풍 건조 단계； 냉풍 건조된 쌀이 함유하고 있는 자유수(free water)를 강제 탈착시켜 상기 쌀의 공극율이 향상되도록 상기 쌀을 진공챔버에 투입하고, 일정한 압력으로 상기 진공챔버 내부를 감압하는 진공 건조 단계； 상기 진공 건조 단계에서 감압된 쌀의 표면에 함침액을 분사하는 분사 단계； 상기 분사 단계 이후, 상기 쌀의 공극에 상기 함침액이 스며들도록 고압의 질소 가스를 주입하여 가압하는 가압 단계； 및 상기 가압 단계에서 가압된 쌀을 상온에서 건조하는 건조 단계； 를 포함하고, 그로 인해 쌀의 함침율을 증가시켜 쌀알의 내부까지 기능성 물질을 침투시키고, 공정간 쌀의 표면에서 일어날 수 있는 균열을 방지하여 쌀의 품질을 향상시킬 수 있는 기술을 제공한다.
