The present capsule comprises a calcium alginate shell with a filling made from olives The filling comprises a dispersed phase in the form of an olive suspension, and a dispersion medium based on an aqueous solution thickened with polysaccharides, said solution having a concentration of 0.1-5.6% of the filling of the capsules. The ratio of the phase and the medium is (45.0-17.2):(36.0-63.3) wt.%/wt.%. A capsule binding agent is in the form of a suspension of polysaccharides or lactalbumin in vegetable oil and/or oil from aquatic organisms at a ratio of (20-5):(80-95) wt.%/wt.%. The present caviar product is a mixture of the capsules and the binding agent at a ratio of (70-98):(30-2) wt.%/wt.%. The invention allows for producing a caviar product based on capsules in a stable colloidal form that does not flake or sediment.Capsule contenant un enrobage alginate-calcium avec un fourrage constitué d'olives. Le fourrage comprend une phase dispersée se présentant comme une suspension d'olives et un milieu dispersé réalisé à base d'une solution aqueuse liée par polysaccharides avec une concentration égale à 0,1-5,6 % de la teneur du fourrage des capsules.
