The present invention relates to a method for producing a water-soluble ginkgo leaf extract, which comprises the following steps: dissolving cyclodextrin and a ginkgo leaf extract which is an insoluble material in water； generating a precipitate by adjusting pH of the solution to an acid state； including a ginkgo leaf extract in cyclodextrin； and secondly generating and removing a precipitate by cooling and stationing the included solution. According to the present invention, when a water-soluble ginkgo leaf extract is produced by using the method, a production process is simplified. At the same time, the water-soluble ginkgo leaf extract can be stable to heat and pH without loss of flavonol glucoside, can alleviate a bitter taste of a gingko leaf, and does not generate a precipitate in an acid condition.본 발명은 난/불용성 물질인 은행잎 추출물과 사이클로덱스트린(Cyclodextrin)을 물에 용해하는 단계； 상기 용해액의 pH를 산성으로 조정하여 침전물을 생성시키는 단계； 은행잎 추출물을 사이클로덱스트린에 포접하는 단계； 상기 포접액을 냉각 및 정치시켜 2차적으로 침전물을 생성하여 제거하는 단계를 포함하는 수용성 은행잎 추출물 제조방법에 관한 것이다.본 발명에 따르면, 본 발명의 제조방법으로 제조된 수용성 은행잎 추출물을 제조하는 경우, 제조공정을 단순화하는 동시에 플라보놀 배당체의 손실 없이 열 및 pH에 안정하고 은행잎의 쓴맛을 완화 시키며 산성조건에서 침전물이 발생되지 않는 수용성 은행잎 추출물을 제조할 수 있다.
