An object of the present invention is to provide a method for producing alpharized rice which does not need to proceed with an immersion process and maintains a fine particle shape. The method for producing the alpharized rice comprises: a pressurized steaming process of cooking rice grains as a raw material with pressurized steam； a cooking process of alpharizing the rice grain after the pressurized steaming process； a high-temperature drying process for drying the alpharized rice grain at a high temperature, after the alpharizing process； and a low-temperature drying process for drying the same at a lower temperature than the temperature in the high-temperature drying process, wherein the processes are sequentially conducted. An alpharized layer is formed on the surface of the rice grain by the pressurized steaming prior to the cooking process without undergoing an immersion process.침지 공정을 형성할 필요가 없고, 미립의 형상을 유지한 α 화미의 제조 방법을 제공하는 것을 과제로 한다.해결 수단원료인 미립을 가압 증기로 증자하는 가압 증자 공정과, 그 가압 증자 공정 후의 미립을 α 화하는 취반 공정과, 그 α 화 공정 후의 미립을 고온에서 건조시키는 고온 건조 공정과, 그 고온 건조 공정보다 저온에서 건조시키는 저온 건조 공정을 순차 형성하고, 침지 공정을 형성하지 않고, 취반 공정 전에 가압 증자에 의해 미립 표면에 α 화층을 형성시킨다는 기술적 수단을 강구했다.
