An extraction method of birds nest extract comprises following steps. First, a solution of pulverized birds nest is provided into a reaction tank for emulsification. The tank is vacuumed and heated to a first temperature for a first time period so as to form an emulsion of bird’s nest. The tank comprises an emulsifier and a blender which is disposed surrounding the emulsifier. The first temperature ranges from 30 to 60 Celsius degree, and the first time period ranges from 30 minutes to 12 hours. Second, after the temperature of the emulsion of bird’s nest in the tank is adjusted to a second temperature, a protein enzyme is added to the tank, and the tank is kept for a second time period under the second temperature whereas the emulsifier and the blender is kept running. The first temperature ranges from 30 to 40 Celsius degree, and the first time period ranges from 1 to 12 hours. Third, the protein enzyme is deactivated. Fourth, the emulsion of bird’s nest is filtered to obtain a filtered solution of bird’s nest.
